Christmas Peanut Butter Cookies Everyone Will Love


This recipe was submitted by Laura, who made the very best desserts at our family’s Christmas gatherings. Originally from Louisiana, her baking brings warmth, comfort, and joy to every holiday table.


One of the special treats we have always enjoyed at Christmastime is peanut butter cookies.  Simple yet delicious and part of every Christmas!


Peanut Butter Cookies

Prep: 15 min Chill: 2 hr Bake: 30 min Yields: About 2 1/2 dozen cookies

Ingredients

●       1/2 cup granulated sugar (100g)

●       1/2 cup packed brown sugar (110g)

●       1/2 cup peanut butter (129g)

●       1/4 cup shortening (47.5g)

●       1/4 cup stick margarine or butter, softened

●       1 large egg

●       1 1/4 cups all-purpose flour (156.25g)

●       3/4 teaspoon baking soda

●       1/2 teaspoon baking powder

●       1/4 teaspoon salt

●       Granulated sugar (for flattening)


Instructions

1.     Mix 1/2 cup granulated sugar, the brown sugar, peanut butter, shortening, margarine, and egg in a large bowl.

2.     Stir in flour, baking soda, baking powder, and salt.

3.     Cover and refrigerate for about 2 hours or until firm. This is very important!

4.     Heat oven to 375°F.

5.     Shape dough into 1 1/4-inch balls.

6.     Place balls about 3 inches apart on an ungreased cookie sheet.

7.     Flatten in a crisscross pattern with a fork dipped in granulated sugar. This works best if you pour some sugar into a saucer then dip the fork into the sugar then press into the top of the ball
