The Art of Taste at Ox & Klee – A Multi-Sensory Michelin Experience

Introduction & Background

Located in the heart of Cologne, Germany, Ox & Klee is the visionary restaurant of two-Michelin-star chef Daniel Gottschlich. Known for pushing culinary boundaries, Gottschlich has created a concept that goes far beyond dining, it’s an immersive artistic journey.

What immediately stands out is the philosophy of inclusivity: there is no dress code. Guests are encouraged to come exactly as they are, something rare and refreshing at this level of fine dining.

Menu & Concept

“The Art of Taste” is not just a menu, it’s a narrative. Guests choose between two journeys: Menu Klee (vegetarian) and Menu Ox (fish, meat & seafood). Each menu explores flavor through six core taste dimensions: salty, sweet, bitter, fatty, sour, and umami. Every course is part of a multi-sensory composition, sometimes presented as refined plated dishes, other times as playful, avant-garde bites. The experience is designed as a surprise, unfolding course by course with precision and creativity. Each dish is paired with a deeper meaning, turning flavor into storytelling.

The wine pairing, “Alpha – Omega,” is a journey through the history of wine itself, from ancient origins to modern expressions, carefully selected for both geographical relevance and flavor harmony. Equally impressive is the non-alcoholic pairing, which is far from an afterthought. Expect: Freshly pressed vegetable juices, Non-alcoholic martinis, and Creative blends like Versus with herbs and spices. Each drink is matched as thoughtfully as the wines, proving that a non-alcoholic experience can be just as vibrant and complex.

Interactive & Playful Dining Experience

This is where Ox & Klee truly sets itself apart. The evening began with a mysterious briefcase course. Locked and intriguing, it required a key hidden nearby. Once opened, pressing a button revealed details about the dish: ingredients, concept, and its place within the “Art of Taste.” It was immersive, unexpected, and genuinely fun.

Next came a creative twist on bread and butter: A painter’s palette featuring artistically designed bread paired with flavored butters like truffle, squid, and cherry, transforming a classic into edible art. As the experience unfolded, the Flavor Cube became a centerpiece. Each dish was accompanied by a color-coded card and presented within a cube that changed colors depending on the course, reinforcing the sensory narrative.

Chef’s Table Experience

Midway through the evening, we were invited into the kitchen, an extraordinary opportunity, especially in a two-Michelin-star restaurant. We met one of the sous chefs, who walked us through the preparation of a dish and its paired drink. Watching the craftsmanship up close added a new layer of appreciation. Few dining experiences offer this level of access and intimacy.

Dessert Room – A Journey Through Elements

After returning for the second half of the meal, the evening concluded in a separate dessert room, an entirely new setting. Here desserts were inspired by the elements: Air, Fire, Water, Earth. Each creation was imaginative, balanced, and deeply tied to the theme.

The night ended on a personal note: a berry and chocolate cake to celebrate our anniversary, an unforgettable touch that made the experience even more special. At the end of our visit, we were also gifted a personally signed copy of Chef Daniel Gottschlich's book, Grazie Roma, a beautiful reflection of his inspirations and culinary philosophy.

Ambience & Service

The space itself reflects the philosophy of the cuisine: Design: Clean lines, warm tones, modern elegance, Atmosphere: Relaxed yet refined, and Service: Attentive, knowledgeable, and genuinely warm.

The team guides you through the evening like curators in a gallery, never intrusive, always enhancing the experience.

Final Thoughts

Dining at Ox & Klee is not just a meal, it’s a carefully orchestrated journey through flavor, emotion, and creativity. Having experienced other Michelin-starred restaurants, this one stands apart. The level of interaction, storytelling, and sensory immersion goes far beyond expectations. From playful presentations to deeply personal touches, every moment feels intentional. This was truly a once-in-a-lifetime experience, one that will stay with me for years to come. If you’re looking for something beyond fine dining, something artistic, immersive, and unforgettable, “The Art of Taste” delivers exactly that.
